To prepare this healthy meal you will need:
- olive oil
- two onions
- one carrot
- a small celery root
- garlic
- parsley
- tomato concentrate
- 500 g. hake fillet
- 500 g. boiled chickpeas
- one and a half liters of fish stock
- salt
- pepper
In olive oil, fry the onion, celery, carrots, add the garlic and parsley towards the end.
Add the fish stock and the boiled chickpeas and hake fillets.
Cook everything for 30 min. on low heat, add the tomato concentrate during the last ten minutes of cooking.
Add salt and pepper to your taste, preferably in moderation.
Right before the end of cooking, take out some of the chickpeas and liquid and turn them into a puree with a
hand blender
and return them to the pot in which they were cooked.
This will give our dish a creamy texture .
